My wife gives me grief every time I talk about buying a sous vide machine for home, but if you've eaten in a fine dining restaurant recently you've probably had meat or fish that came out of a sous vide machine. How it works is it basically poaches whatever you put inside (that you've previously vacuum-sealed) and heats it completely evenly, and then keeps it at that temperature for as long as you need until it's time to serve it. How do you cook the perfect chicken or fish? You have to get its internal temperature to a certain degree - 140-160F - and it's best to heat it as evenly as possible. That's what the sous vide does. Tender, moist chicken breast and perfectly flaky fish are just a large countertop machine away. Of all of the kitchen appliances I've seen this is the one that inspires gadget lust in me the most intensely.
