On July 1, 2006 a place formally known as The Boathouse, became Pier 54 on the Waterfront Pier 54 is a beautiful, lakeside restaurant offering an eclectic, casual restaurant atmosphere with a warm, hospitable environment and as incredible view. Who needs walls? Not this ultra-casual neighborhood hideaway, which has three levels of all-outdoor seating on the shore of an urban lake. Inexpensive salads, sandwiches and burgers are surprisingly tasty. It's a pleasant, quiet environment, far from any busy streets or crowds. Our story begins in Bisbee about 22 years ago. Arizona had just legalized micro breweries and "Electric" Dave applied for the state's first brewer's license. He worked hard to perfect his beer recipes and earned many admirers along the way. Two fans, Scott and (the other) Dave, entered into a business partnership with "Electric" Dave so they could introduce the brews to their hometown of Tempe. Dave's Electric Brewpub continues the quality micro brew tradition near Mill Avenue in downtown Tempe by serving the four Bisbee beers (lager, IPA, pale ale and oatmeal stout) and will begin making their own brews soon.THE BREWING PROCESS: Crushed barley is combined with hot water in a large tank where the grain's carbohydrates are turned into sugar. After about an hour, the barley and water are separated (our barley is composted) and the water is boiled in another tank for almost an hour. Hops are added during the boil. The water is cooled and is transferred into a fermentation tank with yeast. It will ferment for 7-12 days during which time the yeast releases carbon dioxide which creates carbonation. The beer is then stored for a couple months in different tanks until it's put in kegs or bottles. The system for Dave's Electric Brewpub is a seven barrel package (1 barrel equals 31 gallons or 2 kegs). A 7 barrel tank is approximately 42 inches in diameter and 80 inches tall. The brew house consists of a hot liquor tank (HLT), a mash tun, a kettle, and various pipes, valves and controls. Tap water is filtered, heated and placed into an HLT. Barley is milled (off-site) and combined with the hot water in the mash tun. Temperature and time are critical and vary depending on the type of beer being produced. After certain conditions are met, the liquid (the spent barley stays in the mash tun) is directed into the kettle where it is boiled for 45 to 60 minutes. Hops are added during the boil.
