Though Somalia lies next door to Ethiopia, its food is distinct. Somalis do have a form of spongy enjera, that bread Ethiopians use both as utensil and accompaniment to their stews. But the Somali version is mostly eaten for breakfast alongside liver and onions. It's less spongy, more like a pancake, and a bit more appetizing. Somalis do have scrumptious meat and chicken dishes, however, often served with basmati rice that has been flavored with cardamom and cinnamon, called bariis. And the meals served with it are equally gustable. Sukhaar is a traditional dish of tender beef chunks sauted with bits of scallion, bell peppers, and tomatoes. Hillib is goat meat, second only to camel flesh in the Somali culinary canon according to the folks at Juba. But as camel steak is difficult to acquire locally, hillib is the meat of choice for Somalis in the PHX.

My name is George and I currently own and operate George's Famous Gyros in Scottsdale, AZ. I was born and raised in Chicago until the age of ten when my family and I moved to Greece. That was definitely nice for a while but after about a year and a half we decided to move back to the States. We've been here in Arizona for about thirteen years now and consider it to be our second home. Although George's Famous Gyros is the first restaurant I've opened on my own, I have had plenty of experience running restaurants because my family has been in this business for as long as I can remember.The word "Gyro" means "round" in Greek. At George's Famous Gyros, which recently opened at 7620 E. McKellips Road in Scottsdale, it appears to also be a reference to our extremely well-rounded menu. Make no mistake about it, the Gyros are delicious, but you'll also find great Pita Pizzas, Greek salad, Hummus, Baklava and other Greek favorites, plus Italian cuisine including Spaghetti, Fettuccine Alfredo, Chicken Parmigiana and Italian Sausage Sandwiches. If you'd like something a little more domestic, Burgers, Hot Dogs and Chicken Wings are also available. There's no denying that Mexican restaurants are a dime a dozen here in the Valley of the Sun. But gourmet Mexican (otherwise known as "gour-mex")?? Not so common. Which is why you need to try Padre's Modern Mexican Cuisine, where authentic and delicious Mexican food is served with flair and not just a little bit of boldness. Co-founder Denny Durbin lived in the heart of Mexico for more than two decades, where, in trendy San Miguel de Allende, he opened the innovative and popular Agave Azul restaurant in 1999. This was the prototype for Padre's here in Phoenix, which he and his wife Ivanne and their son Cole opened on Cinco de Mayo 2004. Executive chef Ivanne was born and grew up in Mexico City and Cuernavaca, Mexico. Her training? "After cooking for a family of 15 to 25 nightly," she laughs, "guess what? You're a chef!" Chef Victor Romero, formerly of the popular Richardson's Restaurant, joined the team to further refine Ivanne's original recipes, add even more fresh ingredients and provide special interpretations of classic recipes. Pastry Chef Kyle Kobs came on board to add some mouthwatering desserts to the already impressive menu. Padre's menu will surprise anyone familiar with American-Mexican food. Sure, you'll find tacos, enchiladas and burritos, but even these are served with a twist, like salmon spinach enchiladas in chipotle cream sauce, duck breast tacos, and a burrito filled with chargrilled chicken, sauted mushrooms, caramelized onions, aaxaca and cheddar cheese. Sitting over one of the sweet, potent margaritas at Mucho Gusto - the one fashioned with house-made tamarind syrup is especially cool - alternating sips with mouthfuls of chips dipped into zingy, multichile salsa, I almost regretted my professional obligation to move on to the rest of the meal. Indeed, if the cheap-bag-quality chips had been better - they're Mucho Gusto's weakest link- I'm not sure I could have summoned up the willpower to get on with my work.Despite the University Drive address, Mucho Gusto is far enough from campus, and just costly enough (entrees range from $10 to $16), to keep most students away. The setting is as grown-up as the clientele: wood accents, red banquettes, votive candles glimmering behind pre-Colombian masks on the wall, paintings of overweight grotesques in the style of Fernando Botero and tasteful vintage photos of nudes in the men's room. The inviting patio, with fireplace and heaters, is a plus at this time of year.

Our story begins in Bisbee about 22 years ago. Arizona had just legalized micro breweries and "Electric" Dave applied for the state's first brewer's license. He worked hard to perfect his beer recipes and earned many admirers along the way. Two fans, Scott and (the other) Dave, entered into a business partnership with "Electric" Dave so they could introduce the brews to their hometown of Tempe. Dave's Electric Brewpub continues the quality micro brew tradition near Mill Avenue in downtown Tempe by serving the four Bisbee beers (lager, IPA, pale ale and oatmeal stout) and will begin making their own brews soon.THE BREWING PROCESS: Crushed barley is combined with hot water in a large tank where the grain's carbohydrates are turned into sugar. After about an hour, the barley and water are separated (our barley is composted) and the water is boiled in another tank for almost an hour. Hops are added during the boil. The water is cooled and is transferred into a fermentation tank with yeast. It will ferment for 7-12 days during which time the yeast releases carbon dioxide which creates carbonation. The beer is then stored for a couple months in different tanks until it's put in kegs or bottles. The system for Dave's Electric Brewpub is a seven barrel package (1 barrel equals 31 gallons or 2 kegs). A 7 barrel tank is approximately 42 inches in diameter and 80 inches tall. The brew house consists of a hot liquor tank (HLT), a mash tun, a kettle, and various pipes, valves and controls. Tap water is filtered, heated and placed into an HLT. Barley is milled (off-site) and combined with the hot water in the mash tun. Temperature and time are critical and vary depending on the type of beer being produced. After certain conditions are met, the liquid (the spent barley stays in the mash tun) is directed into the kettle where it is boiled for 45 to 60 minutes. Hops are added during the boil.
